MINESTRONE SOUP                                                                                                      D Ivey

INGREDIENTS
1/2 cup Unsmoked Bacon
2-3 Cloves Garlic-chopped
1 med. Onion -chopped 4 Carrots-finely chopped
2 Tbs. Fresh Rosemary -chopped
4 Stalks Celery-fine chop
2 Tbs. Fresh Parsley -chopped 4 cups
Cabbage -shredded
1 lb. Beans -pre cooked (Kidney is good)
4 cups Tomato puree
4 cups Hard Bread -cubed
Grated Parmesan Cheese

METHOD Put everything except bread and cheese into a large pot and simmer about 2 hours. Add bread. Simmer another hour stirring every 10-15 minutes. Sprinkle Parmesan on top when served.
